CINNAMON BANANA MINI LOAVES


  1. Preheat oven to 350 degrees

  2. Grease small loaf pan (unless using disposable mini loaf cups)

  3. Puree bananas using immersion blender.

  4. Sift together flour, baking powder, baking soda and salt. Set aside.

  5. Mix shortening and sugar in large bowl until well combined. Add flax egg, banana and vanilla extract. Mix till combined.

  6. Blend dry mixture into wet mixture.

  7. Scoop into mini loaf cups (or greased loaf pan).

  8. Sprinkle on crumble topping.

  9. Bake at 350 degrees until done. Baking time will vary depending on loaf size (keep a close eye and do the toothpick trick).

LOAVES:

  • 1/2 cup vegetable shortening

  • 1 teaspoon vanilla extract

  • 1 flax egg (1 tablespoon flax meal + 3 tablespoons water - sit five minutes)

  • 2 + 1/2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1 + 1/4 cups organic cane sugar

  • 1 + 1/2 cups ripe bananas (mashed or pureed)

  • 2 cups all-purpose flour (sifted)

  • 1/4 teaspoon salt

CRUMBLE TOPPING:

  • 1/2 cup oats

  • 1/4 cup brown sugar

  • 1/4 cup all-purpose flour

  • 1/4 stick plant-based butter

    (combine all ingredients until a crumble forms)
